IIRC you can do \fontdimen21=0pt immediately after loading the font.
This will make sure that all \fontdimen's up to 21 are present and will
initialize the ones not present in the \font to 0pt. You can then set
the \fontdimens you are interested in to a default value if their value is
0pt. This will of course only work if the value 0pt is not a meaningful
value for the \fontdimen in question.
